I have some nice looking elm from Holyroodhouse no less. It has some burrs within it- is there such a thing as pippy elm?

Do I need to fill these either before turning, or during the finishing process. I am seeking to achieve a high gloss CA finish. If I do need to fill, what should I use- I do have some shellac sticks which I have used on jewellery boxes, but never tried it on anything turned.
