I start my bowls and boxes between centres, it makes for a safer start on rough wood since I start on the outside first. also the point of the tailstock  leaves a dimple in the bowl or box base so that I know where to recover a piece that someone may damage  even if I have infilled the mortice with ebony etc and if you have a fixed sliding headstock like mine then it is essential that the points align, else it ruins the flower that I put in the base to hide the dimple.
