Is it American black walnut? Agree with you that some of the darker of that species can be bland due to the colour, but I love dark Walnut (Juglans regia) as the contrast between the grain and intermediate material is lighter. I don't know what finish that you have used but if you have put a finish on unsealed walnut it can make it even darker still. I use acrylic sanding sealer out of the can, find it helps hold the colour
